  • 4 cups watermelon, cut into cubes and frozen solid
  • ½ cup silver tequila
  • ¼ cup triple sec or orange liqueur
  • Juice of 2 limes
  • 1–2 tablespoons agave syrup or honey, to taste
  • Tajín or salt, for rimming glasses
  • Lime wedges and mini watermelon slices, for garnish

Feta & Herb Watermelon Skewers with balsamic glaze

INGREDIENTS

  • 3 cups seedless watermelon, cut into 1-inch cubes
  • 1½ cups block feta cheese, cut into ¾-inch cubes
  • 20–24 small fresh basil leaves
  • 20–24 fresh mint leaves
  • Balsamic glaze, for drizzling (optional)
  • 4- to 6-inch cocktail skewers or wooden picks

  • 1 cup balsamic vinegar
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1 teaspoon Dijon mustard (adds depth and slight tang – optional but recommended)
  • 1 small clove garlic, minced (optional, for a subtle savory note)
  • Pinch of salt
  • Freshly ground black pepper to taste

INSTRUCTIONS

  1. Combine Ingredients: In a small saucepan, whisk together the balsamic vinegar, honey, and Dijon mustard. If using garlic, add it now.
  2. Simmer: Bring to a gentle simmer over medium-low heat. Stir frequently and allow it to reduce for 12–15 minutes, or until the glaze coats the back of a spoon.
